Lobster, Chicken and Tofu Rolls

Yield: 4 to 6 rolls per version

Preparation time: 15 to 30 minutes depending on the version

Cooking time: About 20 minutes (for the chicken version)

 

Summer season is finally here and to celebrate the arrival of sunny days, we have prepared for you three ways to enjoy a great summer classic: lobster roll!

Whether it's with lobster, chicken or tofu, everybody will absolutely LOVE it. Enjoy!

INGREDIENTS 

For the chicken rolls

For the lobster rolls

  • Hot dog buns of your choice
  • 2 cups cooked lobster, cubed
  • 1/2 cup fennel bulb, finely chopped
  • 1/4 cup finely chopped green onions
  • 4 tbsp. olive oil mayonnaise
  • 1 tbsp. organic turmeric mustard
  • Fine grey sea salt Maison Orphée to taste
  • Optional: 1 tbsp. pickled horseradish 
  • Suggested toppings: Chopped iceberg lettuce, extra virgin olive oil with lemon, fresh dill and pre-cooked asparagus tips

For the tofu rolls (vegan option)


PREPARATION

For the chicken quills

1. Heat water (enough for three chicken breasts) in a large pot with a good pinch of fine sea salt and 4 tablespoons of apple cider vinegar.

2. When the water reaches a boil, immerse the chicken in it for about 20 minutes or until the internal temperature of the chicken reaches 165°f or 75°c.

3. Once cooked, plunge the breasts into ice water, with large ice cubes (this will help to cool the chicken and firm it up). Allow to cool for a few minutes and drain well.

4. Cut the breasts into cubes and mix all the ingredients for the chicken rolls (except the buns) in a large bowl.

5. Toast the buns (if desired). Fill with the chicken mixture and add the toppings of your choice.

6. Enjoy!

For the lobster rolls

1. Combine all ingredients for the lobster mixture (except the buns) in a large bowl.

2. Toast or not the breads. Garnish with the lobster mixture and add the topping (s) of your choice.

3. Enjoy!

For the tofu guédilles

1. Mix all ingredients for the tofu mixture (except the buns) in a large bowl.

2. Toast or not toast the breads. Top with tofu mixture and addtopping(s) of your choice.

3. Enjoy!

 

    Notes

    Of course, you don't have to follow these recipes to the letter. Let the ingredients at your disposal and your creativity inspire you!
