The combination of Toulouse sausages and Dijon mustard is, in our opinion, a match made in heaven. Add a Niçoise style salad and your meal will be complete and satisfying!
INGREDIENTS
For Niçoise-inspired salad
- 1 package (1 1/2 pounds) baby potatoes
- 250 mL (1 cup) green beans
- 250 mL (1 cup) yellow beans
- 1 small red onion, finely chopped
- 125 mL (1/2 cup) halved cherry tomatoes
- 1 soft-boiled egg, finely chopped
- 45 mL (3 tbsp.) capers
- Fresh herbs to taste
For dressing rooms
- 1/3 cup of The mustard
- ¼ cup of extra virgin olive oil with pepper
- 3 tbsp. organic white wine vinegar
- 1 to 2 tsp. salt
For onions with mustard
- 2 tbsp. butter
- 1 tbsp. Delicate extra virgin olive oil
- 2 red onions, chopped
- ¼ cup of water
- 3 tbsp. Dijon mustard
- Salt and pepper to taste
For the sandwiches
- 4 Toulouse sausages
- 2 baguettes with black olives cut into 6 pieces
- Niçoise lettuce or chicory to taste
PREPARATION
For the salad
In a pot of boiling water, cook the baby potatoes until they become tender (10-15 minutes).
Add the beans and cook 1 to 2 minutes.
Drain the whole thing when it's ready, then let it temper.
When the whole thing is warm or cold, cut the potatoes and beans when cooked. In a large bowl, mix all the ingredients of the salad. In another bowl, mix the vinaigrette. Add to salad and mix gently. Book.
For onions with mustard
In a non-stick skillet, heat butter and extra virgin olive oil. Cook onions for 3 to 5 minutes. Remove from fire. Add water and mustard. Mix well and season to taste.
For the sandwiches
Grill the sausages in a warm skillet, 2 minutes on each side and finish cooking in the oven at 350 ° F for 10-15 minutes.
Garnish the baguette breads with lettuce, sausage and onions with Dijon mustard. Serve sandwiches with Niçoise-inspired salad.
