Pita bagnat niçois

Niçois Pita Bagnat

Preparation: 20 minutes             

Serving size : 1 sandwich

If you're lucky enough to have visited the city of Nice before, you'll recognize right away that this recipe is a tribute to their famous pan bagnat. The pan bagnat is a traditional recipe of the Niçoise cuisine. It is a sandwich made with a round piece of bread, and the ingredients are similar to the niçoise salad, so anchovies, vegetables, black olives and olive oil. Since it is difficult to find the specialised bread in Canada, we've made a few modifications to the recipe. We strongly advise that you assemble the sandwich at the last minute so that the bread does not become soggy


  • 1 can of tuna
  • 3 tbsp. Fresh Mayonnaise made with olive oil
  • 2 tsp. garlic powder
  • 1 tsp. lemon juice
  • 4 thin slices of tomatoes
  • 5 sun-dried black olives (pitted for impatients)
  • 2 tbsp. olive oil with basil
  • 2 anchovies, chopped
  • 3 Boston lettuce leaves, chopped
  • 1 sliced hard-boiled egg
  • 5 green beans, cut in half lengthwise
  • 3 radishes, thinly sliced
  • 2 canned artichoke hearts well, drained and broken down
  • ¼ lemon
  • 1 large pita bread
  • Fine grey sea salt with Provence herbs Maison Orphéeto taste
  • 1 pinch Fleur de sel


  1. Combine tuna, sea salt, Fresh Mayonnaise, garlic powder and lemon juice in a small bowl. Set aside in the refrigerator.      
  2. In a bowl, mix tomatoes, olives, anchovies, lettuce, beans, radishes, artichokes, lemon juice, and olive oil with basil.
  3. Place the pita on a plate. Spread the tuna mixture and add the vegetables, egg and a little fleur de sel. Fold and enjoy.
