Here is an express recipe that can be served as much in aperitif, on a weekday evening or on great occasions. You can cut the salmon in small bites before cooking it and simply serve it on a platter by placing the "crumble" on them when serving.
The richness of the salmon is beautifully blended with the flavors of mustard and the presence of lemon zest. In addition to being a protein rich in omega-3, a portion of salmon provides almost as much calcium as a cup of milk. The ideal recipe for a tasty and nutritious meal.
INGREDIENTS:
For fish
- 1 ½ lb (675 g) salmon fillet, cut into 4 portions
- 3 tbsp (45 ml) honey
- 3 tbsp (45 mL) organic Old Fashioned Morganic old-fashioned mustard
- 1 tbsp (15 mL) extra virgin oliveOilextra virgin olive oil
- Fine grey sea salt and pepper to taste
For the crumble
- 1 tbsp (15 ml) butter
- 1/2 cup (30 g) panko breadcrumbs
- 1/2 cup (70 g) mixed nutsfinely chopped with a knife or food processor
- Zest of a lemon
- Fine grey sea salt and pepper to taste
PREPARATION:
Set a rack in the middle position of the oven. Preheat the oven to 200°C (400°F).
Line up a baking sheet of parchment paper. Place the salmon on the plate.
In a bowl, combine the honey, mustard, and oil. Spread this mixture over the salmon fillets. Season with salt and pepper. Place the salmon fillets on the prepared baking sheet. Bake 12 to 15 minutes, depending on the thickness of the fillets and the desired doneness. Set aside.
While the salmon is in the oven, melt the butter in a non-stick skillet. Add the panko breadcrumbs, mix, and stir in the rest of the ingredients. Continue cooking for a few seconds, then remove from heat. Salt and pepper.
Serve the salmon in four plates and garnish with panko crumble.
