Endive, apple and crunchy lupin salad

Elegant and sophisticated, endives are not always appreciated for their marked bitterness. However, when accompanied by sweet, tangy or fatty ingredients, their crunchy freshness stands out and makes your taste buds happy indeed!

Here's a salad for adults that will keep you coming back for more!

 

INGRÉDIENTS 

  • The leaves of 4 to 6 endives
  • 15 ml (1 tablespoon) Maison Orphée Old-Fashioned Mustard
  • 45 ml (3 tablespoons) Maison Orphée Fresh Mayonnaise
  • 15 ml (1 tablespoon) maple syrup
  • 120 ml (1/2 cup) microgreens, to taste
  • ½ apple, thinly sliced
  • 1 shallot, finely chopped
  • 15 ml (1 tablespoon) Maison Orphée Red Wine Vinegar
  • 1/3 cup Croque Lupin Roasted Maple Praline Lupins
  • A few pieces of Louis Cyr cheese, for garnishing
  • Chopped chives (optional)


PRÉPARATION

  1. In a bowl, combine old-fashioned mustard, mayonnaise and maple syrup.

  2. In another bowl, combine apples, shallots and cider vinegar.

  3. Place endives on a plate. Garnish with microgreens, apple mixture, vinaigrette, cheese pieces, roasted lupins, a few apple slices, and chives.
