Today we're serving up a sweet version of baked Brie, with cranberries and brown sugar, topped off with Royal Mustard for an enchanting texture and a touch of tanginess.
A wide variety of Brie cheeses are produced across Canada. That's a great occasion to support your local cheese makers!
INGREDIENTS
- 1 300g brie (we used Alexis de Portneuf Cendré de lune)
FOR THE CRANBERRY SAUCE
- 500 ml (2 cups) frozen cranberries
- 180 ml (3/4 cup) brown sugar or less, to taste
- 15 ml (1 tablespoon) water
- Juice and zest of 1 orange
- A pinch of cinnamon
TO SERVE
- 45 ml (3 tbsp.) Maison Orphée's Royal Mustard or more (to taste)
- Crackers
- Walnuts
- Herbs
- Fresh and dried fruit of your choice
PREPARATION
- In a small saucepan, combine cranberries, brown sugar, water, juice and zest of an orange, and cinnamon. Bring to boil, then simmer for 5 to 10 minutes, until the mixture begins to thicken.
- Pour into a bowl and refrigerate for at least 2 hours.
- Preheat oven to 350°F (180°C).
- Line a baking dish with a square of parchment paper larger than the cheese and place the Brie in the center.
- Bake for 15 minutes.
- Using the parchment paper, move the cheese to the serving platter.
- Top the melted Brie with the cranberry sauce and Royal Mustard, then decorate the serving platter with the remaining toppings and crackers.
