Mac'n'Cheese with Vegetables

Preparation and cooking time : 30 to 45 minutes depending on your little cooks

Learning to eat well starts early. And there's nothing better than cooking a good homemade meal with your little cooks to pass on your own good habits! Our recipe for success? A macaroni and cheese made with a ton of vegetables that will surely please everyone at home!

INGREDIENTS 

To maximize the autonomy of your apprentice-chefs when making the recipe, please the recipe, please make sure you have these ingredients at home:

  • 2 cups of macaroni or other short pasta of your choice (We like the ones from GoGo Quinoa, a nice alternative to wheat)
  • 2 cups butternut squash, peeled and cubed
  • 1 yellow onion, coarsely chopped
  • 1 clove of garlic, halved
  • 2 cups chicken or vegetable stock
  • 2 tbsp.delicate extra virgin olive oil
  • ½ cup of milk (or plant-based milk)
  • ½ tsp. Sriracha sauce (or cayenne pepper) to the taste of sensitive little taste buds
  • 1 tbsp. tomato paste
  • 2 tbsp. yellow mustard with turmeric
  • 1/2 tsp. Herbal Sea Salt Maison Orphée, or more, to taste
  • 1 cup sharp cheddar and parmesan cheese (ideally from Quebec), or more to taste

PREPARATION

1. Cook macaroni according to manufacturer's instructions, Drain, then set aside in the pot.

2. Add the vegetable broth, squash cubes, onion and garlic in a pot and simmer until squash is very tender (about 15-20 minutes). squash is very tender (about 15 to 20 minutes).

4. Transfer the contents of your pot (squash, onion, garlic and broth) into a blender (such as a "blender" or using a blender). blender" or with a blender blender) and add oil, milk, Sriracha, tomato paste, mustard and salt.

5. Mix well until smooth and creamy. Pour the sauce over the reserved pasta in the pot.

6. Reheat the pasta and sauce, and gradually add the cheese.

7. Stir until the cheese is melted. Check seasoning, adjust if necessary.

8. Bake at " broil "a few minutes.
