On this cloudy Friday, here's a recipe filled with love and appreciated by all, a must to any family dinners: the Love Salad!
Sometimes referred to as "the Chinese Salad", it's a moms' specialty and is very popular in potlucks. Fresh and tasty, it will accompany any dish!
Psst, it's perfect for passing leftover rice.
INGREDIENTS
For the salad
- 3 cups cooked and tempered basmati rice
- 1/2 cup cashews, lightly toasted in a pan
- 3 green onions, chopped
- 1/3 cup grapes
- 1 cup bean sprouts
- 2 cups baby spinach
- 1 red pepper, diced
- 2 stalks celery, diced
- 5 sliced button mushrooms
- Salt and pepper to taste
For dressing rooms
- 2 tablespoons of toasted sesame oil
- 1/2 cup organic virgin sesame oil
- 1/3 cup tamari sauce
- 1/4 cup honey or maple syrup
- 1 clove garlic, finely chopped or crushed with a garlic press
- 1 tbsp. pureed or finely chopped ginger (optional)
PREPARATION

In a bowl, combine dressing ingredients; set aside.

In a salad bowl, combine salad ingredients and add desired amount of dressing.

Stir well, add salt and pepper to taste and serve immediately to prevent the bean sprouts and spinach from wilting.
