Recipe in collaboration with La Petite Bleuette
No-cook bites that are easy, but most of all HUGELY!
As soon as Little Bleuette tasted our extra virgin olive oil Fruity Green, she knew it would be wonderful in tartar... and she was right!
As she so eloquently puts it, "It's a little piece of happiness with every bite, perfect as an appetizer"
INGREDIENTS
For the cream
- 1 cup (or 250 mL) 14% sour cream
- 1/2 cup finely grated Parmesan cheese
- 1 package finely chopped chives (about 15 to 20 grams)
- 1 tablespoon of organic wholegrain mustard Maison Orphée
- 1 teaspoon of fine grey sea salt
- 1 teaspoon sugar (or honey)
For the beef tartare
- 150g of beef inside round cut in small pieces
- 10 small pickles cut into small pieces
- 1 French shallot, finely chopped
- 1/3 cup ofextra virgin olive oil Fruity Green Maison Orphée
- 1 teaspoon of fine grey sea salt Maison Orphée (or more to taste)
- 1 bottle of caperberries (found in almost every grocery store near the regular capers)
- 40 croutons
PREPARATION
- Mix all the ingredients for the cream in a bowl.
- With the exception of the caperberries and croutons, combine all tartare ingredients in a separate bowl.
- Brush the croutons with the cream, add the tartar and garnish with a caperberry. It's that easy!
- Enjoy in good company!
