A 100% satisfying and delicious Caesar salad without bacon, anchovies or Parmesan cheese is possible! Why not try this vegan version? It cheats a little with a portion of Halloumi cheese, but you can also replace it with tofu if you wish.

INGRÉDIENTS
For the tofu bacon
- 1 block of firm tofu, grated into long, thin pieces
- 30 ml (2 tablespoons) maple syrup
- 15 ml (1 tablespoon) olive oil
- 15 ml (1 tablespoon) smoked paprika
- 15 ml (1 tablespoon) miso
- Salt and pepper
Preparation
- Gently mix all ingredients for the tofu bacon and place in an air fryer in a single layer at 400 Fahrenheit for 12 minutes.
To assemble the salad
- 1 block Halloumi cheese, if using
- 180 ml (3/4 cup) Maison Orphée’s Caesar dressing
- 2 romaine lettuce hearts
- 30 ml (2 tablespoons) olive oil
- 80 ml (1/3 cup) croutons
- 30-45 ml (2-3 tablespoons) nutrional yeast (optional)
Préparation
- Cut the block into 5 mm slices and combine with ¼ of the Caesar dressing; marinate 1-2 hours in the fridge.
- Split romaine hearts in half, brush with olive oil and grill on a BBQ or non-stick griddle.
- Grill the Halloumi cheese for 2-3 minutes on each side until golden brown.
- Garnish romaine hearts with cheese, tofu bacon, croutons, additional Caesar dressing and nutritional yeast, if desired.
