 - 110 g (1 cup) shredded Tex-Mex cheese

INSTRUCTIONS
-
Prepare the pizza dough according to the package instructions.
 -
Use only two of the four dough balls made from the mix (see note), and combine them into one large ball.
 -
Preheat the oven to 500°F (260°C).
 -
In a large skillet, sauté the onion over medium-low heat in the spicy olive oil until translucent. Add the plant-based protein and vegetable broth, cooking until the liquid is fully absorbed. Set aside.
 -
On a lightly floured surface, roll or stretch the dough into a rectangle about 33 × 46 cm (13 × 18 in).
 -
Place the dough on a sheet of parchment paper. Top in this order: pizza sauce, roasted peppers, Tex-Mex protein, cheese, tomatoes, jalapeño, and olives.
 -
Transfer the pizza to a baking sheet (or pizza stone) and bake for 10 to 12 minutes, until the crust is golden brown.
 -
After baking, drizzle with spicy olive oil and sprinkle with fresh cilantro.
 - Serve with sour cream and guacamole.

Note
You can freeze the two remaining dough balls or double the toppings to make two large pizzas.
