Chocolate Hazelnut Flourless Cake

Preparation time: 20 minutes

Cooking time: 30 to 35 minutes

Yield: a cake of about 20 cm / 8 inches


For those who love gluten-free and dairy-free recipes, or for those who love chocolate as much as we do! This six-ingredient cake, concocted in collaboration with our good friends Nuts to Youis a cross between a melt-in-your-mouth brownie and a soft macaroon. How can you not have your mouth watering?

1. Preheat oven to 325⁰F. Line the bottom and sides of an 8-inch cake pan with a large piece of parchment paper. It doesn't need to be precise; wrinkles and creases are welcome.

2. Melt chocolate, Coconut Oil and Hazelnut Butter in the top of a double boiler, combining until smooth. Set aside.

3. Separate egg whites from yolks. In one bowl, whip egg whites with a hand mixer on medium high until foamy. Slowly incorporate ¼ cup of sugar, one spoonful at a time. Beat on high until stiff glossy peaks form.

4. In another bowl, whip egg yolks and ¼ cup of sugar with a hand mixer on medium high speed until pale and fluffy, about 3 minutes.

5. Using a large metal spoon or wide, flexible spatula, add egg yolk mixture to chocolate mixture and fold in well.

6. Add egg whites in three additions, folding gently to incorporate with each addition until no streaks remain.

7. Pour batter into cake pan. Bake for 30 to 35 minutes or until cake is puffed and center is set.

8. Let cool for 15 minutes. The cake will fall apart, giving it a nice cracked texture. Sprinkle with fleur de sel and serve.
