What's the difference between Fresh Mayonnaise and Fresh Mayonnaise made with extra virgin olive oil? The recipes for these two fresh mayonnaises are different, and it's mainly in taste that you'll notice a difference. The Fresh Mayonnaise made with extra-virgin olive oil has more lemon notes. We therefore recommend it for lobster guédilles or fish & chips.

 

What is the shelf life of fresh mayonnaises? Our fresh mayonnaises have a shelf life of 12 months when they leave our factory. Once your jar has been opened, you can consume the product until the expiry date marked on the product.


Can I leave fresh mayonnaise on the counter or in a cupboard if it's unopened? Fresh mayonnaises should be kept in your refrigerator at all times, even if unopened. This preserves their flavor and freshness, since the recipe contains no preservatives.


What is EDTA? EDTA or calcium disodium EDTA or ethylene diamine tetra-acetic acid is a preservative often used in the cosmetics and food industries. In the food industry, it is an additive that prevents discoloration due to oxidation. As a result, products containing it last longer and go rancid more slowly.
Since we want to offer products that are as close as possible to the recipes you cook at home, we don't use preservatives that aren't 100% natural in our recipes. We use cider vinegar and lemon juice to ensure the shelf life of our products. These are natural preservatives that have been known for thousands of years and have no negative effects on health.


How long can I keep the opened product in my fridge? Until the expiry date printed on the product label.


How do you ensure that the product keeps for 1 year without preservatives? Our fresh mayonnaises have a shelf life of one year, thanks to our all-natural ingredients! Lemon juice and organic cider vinegar ensure optimum preservation.


How do you compare with other mayonnaises in terms of sodium? If we compare our Fresh Mayonnaise to the best-selling mayonnaise on the Canadian market, we have 36% less sodium per serving, i.e. 60 mg compared to 95 mg.
