Vegan Dogs, Pickled Vegetables and Maple & Harissa Mustard

Servings: 6 to 8 vegan dogs

Summer rhymes with barbecue. And when you say barbecue, you say hot dog!

For a change from the classic "roast", we have teamed up with none other than GUSTA, to concoct a recipe for vegan dogs! Yes, you read that right. A meatless alternative that is just as tasty (or even tastier)!

As for toppings, we suggest a homemade maple and harissa mustard, along with some sweet and sour pickled vegetables. A delicious combination!

INGREDIENTS 

For the vegan dogs

  • 6 to 8 hot dog buns of your choice
  • 6 to 8 GUSTA vegan dogs (one package contains 12)
  • Homemade maple & harissa* mustard to taste
  • Pickled vegetables** to taste
  • Optional: crisp lettuce (iceberg or romaine)

For the homemade maple & harissa mustard

For the pickled vegetables

  • 2 carrots, julienned
  • 2 stalks celery, julienned
  • 8 radishes, cut into half moons
  • 1 red onion, cut into thin slices
  • 3/4 cup of cane sugar
  • 1 1/2 cups of organic cider vinegar
  • 3/4 cup of water

PREPARATION

1. For the pickled vegetables, place the vegetables in a large 1L Masson-style jar (or several smaller jars).

2. In a saucepan over medium heat, bring the water, apple cider vinegar and cane sugar to a boil. Simmer for about 5 minutes. Then pour over the vegetables.

3. Before closing the jar(s), wait a few minutes for the temperature of the liquid to drop.

4. Close the jar(s) and refrigerate for at least one hour, preferably two hours before serving.

5. For the maple mustard & harissa, whisk all ingredients together until well incorporated. Pour into a dish or jar until ready to serve.

6. When the pickled vegetables are ready, grill the vegan dogs and buns to your liking.

7. Garnish with the pickled vegetables and the maple & harissa mustard.

8. Enjoy!
