Banana bread has become a great classic in recent years and an obvious crowd pleaser. Everyone has their own recipe. It's not uncommon for us to have a "Who makes the best banana bread" contest during our brunches. Our recipe, the best one obviously, is incredibly simple to prepare and you can make it by using a single bowl. Amazing right! The less dishes there are, the more we appreciate this famous banana bread.
INGREDIENTS:
Wet ingredients- 1 1/3 cups (335 ml) very ripe bananas, mashed (about 3 large bananas)
- 2 tbsp (30 ml) flaxseed, ground
- 1/3 cup (85 ml) plant-based milk
- 1/3 cup (85 mL) Deodorized coconut oil coconut oil (or other oil)
- 2 tbsp (30 ml) pure maple syrup
- 2 tsp (10 ml) pure vanilla extract
Dry ingredients
- 1/4 cup (65 ml) cane sugar
- 1/2 cup (125 ml) oats (not instant)
- 1 tsp (5 ml) baking soda
- 1/2 tsp (3 ml) baking powder
- 1 tsp (5 mL) Coarse grey salt (it's important to use coarse salt .... it's the secret!)
- 1 1/2 cups (375 ml) flour (ideally spelt)
- Nuts and chocolate chips to taste!
PREPARATION:
Preheat oven to 350°F (180°C).
Spray/oil a loaf pan and set aside.
In a large bowl, combine all wet ingredients until combined.
In the same bowl, stir in the dry ingredients one by one.
Transfer the mix into the loaf pan.
Bake the loaf for about 50 minutes. To know if the banana bread is ready, use a toothpick or knife. It should come out dry.
Get the banana bread out of the oven to cool, then remove it from the pan.
