With back-to-school just around the corner, how about a fluffy chocolate muffin recipe that's (almost) impossible to mess up to fill all those lunchboxes?
The secret ingredient in our muffins is our Fresh Mayonnaise. When you think about it, it contains eggs and oil, ingredients naturally found in this beloved snack.
INGREDIENTS
- 750 ml (1 1/2 cup) all-purpose flour
- 180 ml (3/4 cup) sugar
- 3 ml (3/4 tsp.) baking soda
- 3 ml (3/4 tsp.) baking powder
- 85 ml (1/3 cup) cocoa
- 180 ml (3/4 cup) Maison Orphée's fresh mayonnaise
- 180 ml (3/4 cup) water
- 1 egg
- 180 ml (3/4 cup) semi-sweet chocolate chips, to taste
- 180 ml (3/4 cup) white chocolate chips, to taste
PREPARATION
- Preheat oven to 350°F. Line a 12-cup muffin tin with paper or silicone liners.
- In a bowl, combine all dry ingredients. Add the mayonnaise, water, egg and mix until smooth.
- Divide the batter among the muffin cups.
- Bake for 20 minutes or until a toothpick inserted in the center of a muffin comes out clean.
