Here's the perfect cake for a celebration. The secret to its moistness: using mayo in the recipe. That's right, mayo! Try it out and tell us your thoughts on the result. Believe us, you'll LOVE it! We also offer you a choice of two different frostings, a healthier and a richer one.
INGREDIENTS:
For the cake- 2 cups (500 ml) flour
- 2/3 cup (170 mL) cocoa powder
- 1 tbsp (15 ml) baking soda
- 1 tsp (5 ml) baking powder
- 3 eggs
- 1 cup (250 ml) sugar
- 1 tsp (5 ml) vanilla extract
- 1 cup (250 mL) Fresh Mayonnaise
- 1 cup (250 ml) water
Healthier frosting
- 1/2 cup (125 mL) Deodorized coconut oil
- 4 tablespoons (60 ml) maple syrup
- 1 cup (250 ml) unsweetened cacao powder
Extra rich frosting
- 3/4 cup (1 1/2 sticks) unsalted butter, softened
- 1/2 cup (125 mL) unsweetened cacao powder
- 2 1/2 cups (625 mL) powdered sugar
- 1/4 cup (65 mL) milk
- Vanilla extract, to taste
PREPARATION:
For the cake
Preheat the oven at 350°F (180°C). Grease two 9 po/ 23 cm baking pans with coconut oil and flour.
In a medium bowl, mix the flour, cacao, baking soda and baking powder. Reserve.
In a large bowl, with a hand mixer, beat the eggs, sugar and vanilla at high speed for 3 minutes or until the mix is light and smooth.
Reduce the speed and add the fresh mayo. Mix until fully integrated.
Add equal portions of the flour mix to the liquid one, alternating with the water, so that you start and finish the addition of the flour mix.
Transfer to the prepared cake pans.
Bake in the oven for 30 minutes or until a toothpick can be inserted and removed clean into the center of the cake. On a metal rack, allow to cool down for 10 minutes. Remove from the cake pans and allow to cook down completely.
For the healthier frosting
Using a whisk, mix the cacao, melted coconut oil and maple syrup. Frost the cake according to your preferred styling.
For the extra rich frosting
In a mixer's bowl, add the cacao and dislodge the chunks with a few whisks.
Add the softened butter and mix well.
Stop the mixer. Add milk and sugar in 4 parts and mix thoroughly after each addition.
Add the vanilla extract.
Adjust the texture to your taste. If you want it more liquid, add more milk. If you want it more or less liquid, add more sugar.
Frost the cakes to your preferred styling.
