Topped with olives and shaped by hand, this simple and quick recipe lets you create a fougasse that’s crispy on the outside and soft on the inside. INGREDIENTS
- 375 ml (1 1/2 cups) warm water
- 7 g (2 tsp) instant yeast
- 1 bag of Maison Orphée Focaccia Mix
- 15 ml (1 tbsp) Maison Orphée Extra Virgin Olive Oil, plus more for spreading
- 100 g (3/4 cup) black olives, pitted and halved

INSTRUCTIONS
- Preheat the oven to 220 °C (425 °F). Line a baking sheet with parchment paper.

Follow the initial preparation steps on the focaccia mix package. After the first rise, roll the dough out thinly on a lightly floured surface. Sprinkle with olives, then fold the dough over itself a few times to incorporate them well.

Place the dough on the prepared baking sheet, cover, and let rest for 5 minutes.

Roll the dough out slightly into a disk about 20 cm (8 in) in diameter. Make 5 or 6 slits in the dough and gently pull them apart to shape the fougasse. Drizzle with a bit of olive oil. Cover and let rise for 40 minutes, or until the dough has doubled in size.
- Bake for 15 minutes, or until the fougasse is nicely golden. Let cool slightly.
