Crispy, creamy and full of freshness. This breaded chicken sandwich topped with avocado, crisp lettuce and a Green Goddess sauce made with our mayonnaise has everything it takes to become a new favourite. A simple, satisfying recipe that’s perfect for switching things up from the classic sandwich!

INGREDIENTS
For the chicken
- 2 submarine-style sandwich rolls or ciabatta rolls, sliced in half lengthwise
- Maison Orphée EVOO
- 2 chicken breasts, sliced in half horizontally to make 4 cutlets
- Salt and pepper, to taste
- 60 ml (¼ cup) flour
- 1 egg, lightly beaten
- 375 ml (1½ cups) panko breadcrumbs
For the Green Goddess sauce
- 125 ml (½ cup) Maison Orphée mayonnaise
- 125 ml (½ cup) fresh cilantro
- 60 ml (¼ cup) fresh dill
- 1 garlic clove
- Juice of ½ lemon
- Salt and pepper, to taste
For the toppings
- 1 avocado, sliced
- A few romaine lettuce leaves, shredded

INSTRUCTIONS
- Preheat the oven to 190°C (375°F).
- Place the rolls, cut side up, on a baking sheet. Lightly brush with olive oil and toast in the oven for 6 to 8 minutes, until lightly golden.
- Season the chicken cutlets with salt and pepper.
- Prepare three bowls, one with the flour, one with the beaten egg and one with the panko breadcrumbs. Coat each cutlet in flour, then egg and finally panko, pressing lightly to help the coating stick.
- Heat a generous layer of olive oil in a large skillet over medium-high heat. Cook the cutlets for 3 to 4 minutes per side, until golden, crispy and cooked through. Transfer to a paper towel-lined plate and season lightly with salt.
- Meanwhile, prepare the Green Goddess sauce. In a blender or food processor, blend the mayonnaise, cilantro, dill, garlic and lemon juice until smooth. Season with salt and pepper to taste.
- In a bowl, toss the romaine lettuce with half of the sauce.
- Generously spread the remaining Green Goddess sauce on the rolls. Top with the crispy chicken, avocado slices and dressed lettuce. Close the sandwiches and serve immediately.
