INGREDIENTS
For the pizza dough
- 375 ml (1 1/2 cup) warm water
- 7 g (2 tsp) instant yeast
- 1 bag of Maison Orphée Pizza Dough Mix
For the pizza sauce (see note)
- 45 ml (3 tbsp) Maison Orphée Extra Virgin Olive Oil
- 30 ml (2 tbsp) tomato paste
- 10 ml (2 tsp) Maison Orphée Balsamic Vinegar
- 2,5 ml (1/2 tsp) dired origano
- 1 small garlic clove, finely chopped
- A pinch of crushed chili flakes
For the filling
- Meat form 1 spicy Italian sausage, cooked and crumbled
- 4 thin slices of red bell pepper, halved
- 120 g to 175 g (1 to 1 1/2 cups) shredded mozzarella cheese

INSTRUCTIONS
-
Prepare the pizza dough according to the package instructions. The mix yields 4 dough balls; for this recipe, use only 2. Freeze the remaining balls for future use.
- In a small bowl, whisk together all the sauce ingredients. Salt to taste.
- Place a pizza stone in the centre of the oven. Preheat oven to 260°C (500°F).
- On a lightly floured surface, roll out one dough ball at a time to form a thin crust about 30 cm (12 in) in diameter. Spread sauce over the surface, leaving a 1 cm (½ in) border.
- Distribute the meat, cheese, and peppers over one half of the dough. Fold the other half over to form a half-moon shape, then press the edges to seal the calzone. Repeat with remaining ingredients.
- Slide the calzones onto the hot stone. Bake for 6 to 7 minutes, or until the dough is golden brown.
- Enjoy immediately… and savour every bite!
Note
Feel free to use this pizza sauce with your favourite meats and veggies: pepperoni, bacon, sausages, onions, marinated artichokes, etc.
