INGREDIENTS
- 100 g black-eyed peas*, black bean
- 100 g of chickpeas*.
- 100 g of green split peas*.
- 100 g of yellow split peas*.
- 5 stalks celery, diced
- 2 carrots, diced
- 2 onions, chopped
- 4 cloves of garlic, minced
- 2 bay leaves
- ½ tsp. thyme
- 6 cups of broth (chicken or vegetable)
- 2 tbsp. walnut oil
- Salt and pepper to taste
* Don't hesitate to use the legumes of your choice
PREPARATION
- Soak beans and chickpeas in water for 24 hours.
- Rinse and place in a saucepan with the other ingredients, except oil and salt.
- Cook for 2h30.
- Add water if necessary.
- When the soup is ready, add salt, pepper and walnut oil.
