" Rapido presto " is sometimes how we like to cook our meals, especially during the week. Here is a recipe for a good salmon dish with fresh tomatoes for a tasty, yet quick option when you want to keep things simple! Enjoy your meal!
INGREDIENTS
- 2 salmon fillets cut in 4 (800 g)
- 4 tomatoes, diced
- 2 tbsp. chopped fresh basil
- 5 tablespoons of Fruity green extra virgin olive oil
- 1 clove of garlic, chopped
- Salt and pepper to taste
- Basil leaves and black olives for decoration
PREPARATION
- Combine garlic, chopped basil, oil and salt. Let this infusion stand for 15 minutes.
- Steam salmon fillets for 5 minutes.
- Add tomatoes to the oil infusion and season with salt and pepper
- Place the fish on the bed of tomatoes and decorate with basil leaves and olives.
We recommend serving over fresh tagliatelle for a complete meal.
