Here's a recipe that will take you overseas with the delicious Mediterranean flavours of our Greek Marinade Vinaigrette. Marinated peppers accompanied by feta cheese and olives, this is the perfect dish to share with your guests.
INGREDIENTS
- 4 red peppers
- 200 g feta cheese
- 50 g pitted black olives
- 100 ml Greek Marinade Dressing
- Fresh parsley, to taste
- Sea salt and pepper to taste
PREPARATION
- Grill the peppers whole in a pan or on the barbecue for 15 to 20 minutes. Turn often so that the skin is blackened and blistered in places.
- Remove from grill and let cool.
- Peel, remove seeds and cut into thin strips. Arrange in a serving dish.
- Add Greek Marinade Dressing and cover with plastic wrap. Let marinate at least 2 hours at room temperature.
- Just before serving, cut the feta cheese into strips and arrange between the bell pepper strips.
- Chop the olives and sprinkle over the mixture. Garnish with fresh parsley.
