Who doesn't love popsicles? To enjoy a nice warm day, they are the perfect little treat! Here are two versions: one alcoholic and the other creamy and vegan.
POPSICLE COCKTAIL
Here's an original way to present your cocktails this summer: as a popsicle. You can of course make this recipe without alcohol and enjoy delicious mocktails. If you want to add a little color you can put some raspberries in the molds before freezing them.
Our Organic Raspberry and Cardamom Apple Cider Vinegar's acidity is what gives this recipe its edge.
You can also simply eat the popsicles right out of the freezer, without the bubbly cocktail or carbonated water.
INGREDIENTS
- ½ cup of apple juice
- ½ cup cranberry or raspberry juice
- ¼ cup cider organic red wine vinegar
- 2 tbsp. vodka (optional)
- Bubbly white wine or carbonated water to serve as cocktails/mocktails
PREPARATION
- In a large bowl, mix together all the ingredients and pour into your popsicle molds.
- Add a few raspberries if you like.
- Freeze at least 3 hours.
- Serve in a glass filled with bubbly wine or carbonated water, or as is.
CREAMY VEGAN POPSICLE
Belsoy brand soy cream gives these popsicles the creaminess you love. Much better for you than store-bought popsicles, you'll find that they're very easy to make. You can substitute coconut milk for the cream.
INGREDIENTS:
- ½ cup of apple juice
- ½ cup soy cream (Belsoy)
- 1/8 to 1/4 cup (25 ml to 65 ml) cider vinegar Maison Orphée (depending on desired acidity)
- A few drops of vanilla extract
PREPARATION:
- In a large bowl, mix together all the ingredients and pour into your popsicle molds.
- Add a few raspberries if you like.
- Freeze at least 3 hours.
