Pitas marocains au tofu, concombre et menthe

Moroccan Pitas With Tofu, Cucumber and Mint

Recipe in collaboration with Esther Samson

Preparation time: 10 minutes

Cooking time: 15 minutes

Yield: 2 servings

To diversify your meals and make a change from classic chicken Caesar wraps, we suggest an alternative that's a little more exotic-but just as simple!

These tofu pitas will take you on a journey under the sun, offering a light, crunchy, tasty option at your fingertips. The tangy note of Marrakesh Lemon sauce from our Accent Sauce Collection enhances the flavours while harmonizing perfectly with the yogurt and fresh mint.

  1. Preheat the oven to 425°F (220°C).
  2. In a bowl, combine Marrakesh Lemon Accent Sauce, cornstarch and a drizzle of olive oil. Coat the tofu slices.
  3. Spread tofu slices on a baking sheet. Bake for 15-20 minutes.
  4. Assemble pitas with yogurt, tofu, cucumbers, onions, and mint; then, add a dash of Marrakesh Lemon Accent Sauce before folding them in half to serve.

This recipe is equally delicious with other flatbreads, such as naans and gyros (Greek pita bread). If you have access to a panini press, you can even lightly toast your wrap before serving. You won't believe the taste!
