To get an evening with friends or family off to a great start, we've come up with a recipe that's sure to whet their appetites: smoked salmon and grilled spinach canapés to share. Our turmeric yellow mustard and lemon olive oil are the key ingredients for a remarkable combination of flavours.
INGREDIENTS
- 4 slices of white sourdough bread
- 8 slices of smoked salmon
- 2 tbsp. organic turmeric mustard
- 1 tsp. dill
- 1 tsp. honey
- 3 tbsp. Delicate extra virgin olive oil
- 12 spinach leaves
- 2 tbsp. lemon olive oil
- Salt and pepper to taste
PREPARATION
- Brush bread slices with lemon olive oil and toast in oven.
- Mix mustard, dill and honey. Add to toasted bread slices.
- Add the slices of smoked salmon and brush with a little olive oil.
- Remove stems from spinach leaves. Clean leaves and dry. In a bowl, mix with remaining olive oil, salt and pepper.
- Place on a baking sheet and broil for 2 minutes.
- Place the grilled spinach leaves on top of the salmon. Serve.
