INGREDIENTS
- 1 salmon fillet (about 350 g), cut into large cubes
- 2 tsp (10 ml) smoked paprika
- Chili flakes, to taste
- A drizzle of Maison Orphée Perfect Oil
- 3 to 4 bok choy, chopped
- 400 g Asian-style chow mein noodles
Teriyaki sauce
- 1/2 cup (120 ml) soy sauce
- 1/4 cup (60 ml) brown sugar
- 2 tbsp (30 ml) Maison Orphée apple cider vinegar
- 1 tbsp (15 ml) Maison Orphée toasted sesame oil
- 2 cloves garlic, minced
- 2 tsp (10 ml) fresh ginger, minced
Toppings
- 1 shallot, minced
- 1 jalapeño, seeded and minced
- 2 green onions, chopped
- Sesame seeds

INSTRUCTIONS
- In a bowl, toss the salmon cubes with a drizzle of oil, smoked paprika, and chili flakes. Season with salt and pepper.
- In a large pan over medium heat, cook the salmon for 2 to 3 minutes per side, until golden and cooked through. Remove and set aside.
- In a bowl, whisk together the soy sauce, brown sugar, toasted sesame oil, apple cider vinegar, garlic, and ginger.
- In the same pan, heat a drizzle of oil over medium-high heat. Add the shallot and jalapeño, then cook for about 1 minute. Add the bok choy and continue cooking for 2 to 3 minutes, until they begin to soften.
- Pour the sauce into the pan and cook for 2 to 3 minutes, until slightly thickened.Meanwhile, cook the noodles in a pot of boiling water according to package instructions. Drain.
- Add the noodles to the pan and toss well to coat in the sauce. Return the salmon and gently combine. Serve.
- Top with green onions and sesame seeds, then serve immediately.
