INGREDIENTS
For the Crust
- ¼ cup Maison Orphée Lemon Olive Oil
- ¼ cup softened butter
- ½ cup icing sugar
- 1 cup all-purpose flour
For the Lemon Filling
- Zest of 2–3 lemons
- 1 cup granulated sugar
- ¼ cup all-purpose flour
- 3 eggs
- ¼ cup fresh lemon juice
For Serving
- Icing sugar, for dusting

INSTRUCTIONS
- Preheat the oven to 350°F.
- In a large bowl, whisk together the lemon olive oil, butter and icing sugar until smooth. Stir in the flour just until a dough forms.
- Press the dough evenly into a parchment-lined 8-inch square baking pan. Bake for 12 minutes.
- Meanwhile, prepare the filling. Rub the lemon zest into the sugar with your fingertips to release the citrus oils.
- Whisk in the flour, then the eggs until smooth. Stir in the lemon juice.
- Pour the filling over the pre-baked crust and return to the oven. Bake for 22–25 minutes, or until the centre is just set.
- Let cool completely before removing from the pan and cutting into squares.
- Dust generously with icing sugar just before serving.
