These matcha pistachio energy balls are great for satisfying your snack cravings or giving you a boost of energy throughout the day. Easy to make and packed with flavour, they combine the sweetness of dates, the crunch of pistachios, and the fragrant taste of matcha.

INGRÉDIENTS
- ¾ cup raw cashews
- ¼ cup raw shelled pistachios
- 14 pitted Medjool dates
- ¼ cup unsweetened shredded coconut
- 2 tsp matcha powder
- 2 tbsp Maison Orphée Organic Virgin Coconut Oil
- 1 tbsp ground chia seeds or ground flax seeds
- ¼ cup chopped white chocolate (optional)
- 1/3 cup roughly chopped pistachios (for rolling the balls)
PREPARATION

In a food processor, combine the cashews, pistachios, dates, coconut, matcha, chia seeds and coconut oil. Blend for about a minute, until the mixture is finely chopped and uniform.

Once the mixture is well combined, fold in the white chocolate bits.

Using a cookie scoop, form walnut-sized balls with the mixture. Roll them between your hands to make smooth, even balls.

Roll the balls in the chopped pistachios.
- Place them in the fridge for at least an hour to firm up before enjoying.
ASTUCES
- These energy balls can be stored in an airtight container in the fridge for up to a week or in the freezer for up to three months. If freezing, be sure to separate them with parchment paper to prevent them from sticking together.
- For an extra boost of richness and a softer texture, try adding a tablespoon of almond butter or your favorite nut butter to the mixture.
